Veratraldehyde (3,4-dimethoxybenzaldehyde, CAS 120-14-9) is an aromatic aldehyde structurally close to vanillin (which is 4-hydroxy-3-methoxybenzaldehyde). It occurs naturally in vanilla, Siam benzoin, and some other botanicals, and is used in fragrance and flavor for sweet, vanilla-floral notes. It carries FEMA GRAS flavor status and JECFA review. Aromatic aldehydes conjugate into the ring and are far less electrophilic than aliphatic α,β-unsaturated aldehydes, so the sensitization/irritation profile is mild. Not classified as a carcinogen or mutagen; no significant GHS hazards beyond mild eye/skin irritation at neat levels.
