Acetoin (CAS 513-86-0), also known as 3-hydroxy-2-butanone, is a small aliphatic ketone that occurs naturally in butter, strawberries, and other foods. It is approved as a flavouring substance (FEMA GRAS) and used in cosmetics as a fragrance ingredient and pH buffer component. The compound shows low acute toxicity and is not a significant irritant or sensitiser at typical cosmetic use levels. EU regulation does not impose restrictions on acetoin in cosmetic formulations.
